Coming from a relatively small family with our mother having one sister and she in turn the three of us girls.
Our mother asked if we could give her first grandson the surname Bynoe as she wanted to retain the family name, there are now two males carrying this name on our side of the family.
Mother dedicated her professional life to catering and from a very early age we were all encouraged to take part in preparing our family meals.
Roti is one of the popular street foods of Trinidad, we were taught to make Roti by one of the best, Mother Poppelwell. Roti popularity has grown amongst other Caribbean islands, but it was not that popular in the up and coming street food markets of East London.
So why Bynoe Lunchbox, and not Bynoe’s as originally planned?
We wanted to honour our mother in years to come by incorporating the family name.
Two and half years ago we decided to take our services to the streets of Hackney, we wanted to focus on this one particular dish from our menu, the roti. As Street Food is normally promoted during the lunchtime periods, we added the lunchbox extension to create our business name and our story began.
